The grapes are allowed to dry gently in well-ventilated rooms for around 4-5 months, concentrating their flavours, sweetness and colour. In winter, the grapes are crushed, fermentation starts with natural yeast and then the must is filled into 500-1000 lt oak barrels to finish fermenting. The wine matures in wood for 30-36 months before bottling.
The 250 m. elevation, the traditional vine-training system, and consistently low yields combine to produce a wine with unique characteristics and a distinctive personality.
After traditional processing on the skins for 12 – 15 days, the wine is refined in casks for about six months. Malolactic fermentation takes place during this time.
Wine made by the Appassimento method (grapes are pre-dried) is truly complex, full-bodied and well-balanced. The wine is decorated with a round and sweet tannin. A harmonious bouquet with red and blackberries. A real wine of enjoyment!
An important and complex Falanghina, with hints of kiwi, lime and grapefruit, citronella, jasmine developed to remain intact for a long time. The mouth, mineral and enveloping, expresses the same hints with a pleasant persistence.
The cortese grapes grown on the hillsides in the commune of Gavi produce the wine known as Gavi, which can also utilize the “del comune di Gavi” subzone name.
The grapes come from vineyards at 250-300 meters above sea level, on soils of a prevalent sandy rock formation: potent sandy rocks in alternate layers of sandstone; the colours of these soils vary from light brown to light cream.
